Okra in Curry
- 2tbsp avocado oil
- 1 chopped garlic clove
- 1tsp of red chilli pepper powder or crushed
- 1tsp cumin
- 1tsp turmeric
- 2 cups of tomato pure. Blend one or two tomatoes. Don't use a pure from a can
- 2 cups of Okra
- Heat the oil in the pan an fry gently the garlic until soft
- Add the chilies, cumin, turmeric and tomato paste and stir for 5min in low heat.
- Add water and the Okra, simmered and covered for 10 to 15 min until tender.
