Back in 2012, I was suffering from severe dry eyes and constant anxiety which left me sleepless, I felt terrible and I was struggling with normal activity. Over the next year, sitting in doctor's waiting rooms became a hobby. Nothing seemed to help and I was frustrated.
That time I was focused on gaining more muscle and being fit, so I went the traditional route. My diet was based what I learned from going the gym. I believed meat proteins would help me achieve my goals. I was eating a lot of grilled chicken and rice which was really bland and boring. I took no pressure form eating it was purely functional.
I was feeling terrible and the doctors didn't have a solution. So I began to focus on my diet and did some research. I had a huge realization that I was suffering from inflammation. I immediately, start to change my diet by adding more vegetables and switching from coffee to tea. My quality of sleep starts to improve and my anxiety level reduce drastically, I couldn't believe the huge impact food had on improving my quality of life. So I continued reading and learning everything I could about nutrition.
After attending various cooking classes, I understood that eating healthy food which nourishes and nurtures my body doesn’t have to taste like cardboard, it can be oh so delicious and flavorful.
I reclaimed my love for flavorful food and I began to honor the sacred space that is our kitchen table. The stress I felt making meals shifted into a cherished time to nourishing myself and my family. Being at the table is a space to take a delightful pause from our busy lives and connect. Having food that makes me feel great but tastes even better has set me free.
After two years of eating the most delicious whole foods, I was able to wear contact lenses again! What surprised me most was that my astigmatism was reduced in the right eye and completely disappeared in my left eye. The delicious food I was eating had a huge impact on healing my body.
My passion for flavorful food that nourishes the body lead me to the Institute for Integrative Nutrition (IIN). Integrative Nutrition is the only school that analyzes and trains it's students in more that 100 dietary theories with a variety of practical coaching methods. It opened up my eyes to see how individualized food is to every person on the planet. After graduating from such a well rounded program, I feel confident as a wellness coach in helping my clients no matter their lifestyle.
